Summertime is Grilling time with everyone’s favorite “Indian Chicken Tikka Kababs”. Many of us grew up eating these in rolls/wraps or just simply with green chutney and laccha pyaaz(thin sliced red onions). Who can forget those succulent, juicy and super flavorful bites wanting more and more? That perfect charcoal flavor imbued by the burning flames to give that characteristic char. Chicken Tikka Kabab

500 gms Chicken Breast cut into uniform cubes (approx. 8 pieces for a large breast)
- 1st Marination
1 TSP Salt
1 TBSP Lemon Juice
1 TSP Red chili powder
- 2nd Marination
1/2 cup Thick (hung) Curd/Yogurt
1 TSP REd chilli powder
1 TSP Garam Masala
1 TSP Rock salt
1 TSP White Vinegar
1/2 TSP Salt
Directions
- Mixing ingredients of 1st Marination, and rub over cubed pieces of chicken.
- Leave at room temperature for 20 mis
- Add in all the ingredients of 2nd Marination
- Mix and rub over chicken pieces (now having sat in room temperature for atleast 20 mins)
- Leave at room temperature for 30 mins, then refrigerate for 4 to 8 hours preferably overnight.
- Next day (or after atleast 4 hours) put the meat on Skewers
- Put them on stove top grill, and grill for about 20 ~ 30 mins, while basting with oil and marinates

Notes
- The key to this recipe is the time given for marination and to soak its flavors in chicken. the chicken kabab shown here is grilled on a charcoal fire and that gives the BEST tasting dish. But if you want a quick turnaround, then cooking on a stove top grill is the best.
