Spinach Tofu

I have to be honest with you spinach never tasted this good. Infused with Tofu (for Vegans) and Cottage Cheese for vegetarians, this is the perfect dish. It balances protein, fiber, vitamins, minerals with earthy flavors of herbs and spices.

Further, you can infuse Kale and other collard greens into spinach to up the green spectrum of this goodness. Top it with fresh ginger, a hint of cream, and red chili powder to make it an earthy, salty and spicy dish.

Add spices, herbs to increase the nutritional value of your dish.

Pro Tip: To spinach mix in kale, and other collard greens to up the vitamins and minerals and fiber.

Healthy Swaps: For the Indian version swap the tofu with Cottage Cheese/Paneer. To make this a high-protein dish, you can separately add grilled chicken. To make a hearty decadent dish, add marinated lamb.

Ingredients

  • Gravy
  • 1 lb Fresh Baby Spinach

  • 1 cup cubed TOFU (Or Indian Cottage Cheese, see How-to video )

  • Fresh 3 cloves Garlic

  • 1 TBSP Fresh Ginger

  • 1 Medium Red Onion

  • Spices
  • 1 TSP Salt (or to taste)

  • 1 TBSP Garam Masala

  • 1 TSP Black Pepper

  • 1 TSP cumin powder

  • Garnish
  • 1 Tsp finely plucked Cilantro

  • 1 TSP sliced Ginger

  • 1/2 TSP Cream

Directions

  • Boil spinach in water for about 10 mins
  • After boil, drain water, let it cool a bit
  • Food Process/pulse to smooth texture
  • Saute in oil, fresh garlic, ginger and red onion
  • Add Spices and saute for 3 mins
  • Add pulsed spinach, tofu/Cottage Cheese and cook for 15 min on medium heat.

Notes

  • The key to this dish is the consistency of the blended spinach (fine vs coarse). We skip the cream added to keep dish vegan and healthy
