Glutenfree KETO VEGAN Pizza Base

GF KETO VEGAN PIzza base made from our Chef’s own custom flour. This flour mix is SUPER nutritious, as it is fortified with plant proteins, seeds, and nuts. It is rich in Good for you nutrients, vitamins, and minerals i.e. OMEGA 3, Mg, Mn, Ph, K. These can be purchased at farmers’ markets listed here or on our website www.dafiamme.com/menu. These are WHEAT-FREE and SOY-FREE allergens as well. It is especially good for those who want to balance their blood sugars, satisfy cravings, and increase their intake of critical micronutrients that help the body fight inflammation. The base shown here contains dried pizza herbs i.e. oregano, thyme, and basil with spices and seasonings aka black pepper

Baking pizza is a two-step process. STEP 1: First one has to bake(make) the pizza base using the flour by mixing in 1 cup of wet ingredients (listed below). STEP 2: Then one has to do a final bake for cooking the pizza.

This is an easy

Ingredients

  • 260~270 gm GF VEGAN PIZZA dough flour or 1 Bag of Pizza Special Flour

  • 240 gms of Warm Almond Milk and Water (half and half) combined (Approx 1 cup)

  • 1 Teaspoon Apple Cider Vinegar or White Vinegar (Optional but recommended)

  • 1/2 Teaspoon of your favorite spices (ancho, red chili, turmeric, black pepper, cumin, etc) (Optional but recommended for flavor)

  • 1 Teaspoon Extra Virgin Olive Oil

  • A mix of dried herbs (Oregano, Basil, thyme, etc) dried and fresh to taste

STEP 1: Pizza Base Directions

  • Mix all dry ingredients evenly and thoroughly
  • Mix in Almond milk/Water/other wet ingredients(EVOO, vinegar, etc) into the dry ingredients. Use a dough mixer/or a spatula for that. Ensure it has a dough-like consistency and is not batter/runny. It should hold on its own after mixing.
  • Let the dough ball sit at room temperature for 60 mins (at 65 F)
  • Divide into 3 dough balls (roughly 175 gms each) for 8-inch pizza or larger if 2 pizzas are desired. Tip: Using wet hands will make it easy to handle the dough.
  • Using parchment paper and a dough roller, flatten the dough into a pizza base. It should be roughly 8 inches, with a width of about 3 mm. You can use a circular plate to cut out a round pizza shape as desired. see below.
  • After shaping to a pizza base, bake the same in the oven at 350F for 20~30 mins approx. Take care it should not burn on edges, by continuously monitoring it. Flip it halfway through. Bake in the middle of the oven to ensure an even bake.
  • Leave the Baked pizza on wire mesh to cool down for 60 to 180 mins approximately. Your base is ready to be baked for pizza. Store in a cool dry place, refrigerator, or freeze for later use
  • STEP 2: Bake the final Pizza
  • Take the frozen/refrigerated base out and bring it to room temperature.
  • Preheat the Oven to 450F.
  • Top with your favorite sauce, cheese, and toppings.
  • Bake the pizza in the oven for 4 to 8 mins (depending on your oven) I prefer well done so I broil it for 2 mins at the end to make it crisp. It is preferred to put your topped pizza on parchment paper for easy slide-on/out.
  • Let it sit out for 5 to 10 mins till it cools.
  • Enjoy your pizza
